Beat Michigan Casserole
Saturday is the big day for the biggest rivalry in college football (maybe in all sports!). We are big buckeye fans in the Petersen household so we are really hoping for a big win this year after a few years of sad losses. This casserole is a spin-off of an Ohio casserole that you can read all about here. With meat, cheese, pasta and a few vegetables it’s a great one pot meal that comes together quickly and stretches a pound of meat. Enjoy!
Ingredients/Substitution Ideas
- Ground pork–or ground beef, ground turkey, ground chicken
- Onion–white or yellow
- Mushrooms
- Kosher salt
- Black pepper
- Garlic powder
- Italian seasoning
- Chicken broth–or beef broth, I used better than bouillon chicken base and water
- Wagon wheel noodles–or penne, rotini, macaroni
- Pasta sauce–I used Rao’s roasted garlic sauce
- Sweet cherry peppers–I found these by the pickles
- Cheese–try mozzarella, colby jack, cheddar, monterey jack, etc.
- Fresh basil–optional but brings a nice fresh taste to the dish
Steps
Turn Instant Pot to saute setting. When display says HOT add in the pork and break it up. Add in the onion, mushrooms, salt, pepper, garlic powder and Italian seasoning. Brown for about 5 minutes.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the pasta. Dump in the pasta sauce and peppers.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
Stir. Sprinkle cheese on top and let it melt. Serve and top with some fresh basil.
Notes/Tips
- Serve with a green side salad and garlic bread.
- Try adding a half cup of peas or a quarter cup of sliced olives.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
- Another recipe you can make with sweet cherry peppers is Sweet Home Alabama Roast.
- If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.
