Notes/Tips

  • This was a one pot meal for me but if you’re looking for an idea for a side consider serving with a green salad or fruit salad.
  • If you want to make this with white rice you can. However you’ll need to adjust the chicken used and the time you cook. Cut the chicken into bite size pieces so that it will cook at the same rate as the rice. Pressure cook for 4 minutes with a 10 minute natural pressure release.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. The leftovers make a great lunch to take to work!
  • Other recipes you can make with Newman’s Own Balsamic are Instant Pot 3-Ingredient Chicken Dinner and Guilty As Charged Casserole.
