Warm Piggy Casserole

Today’s recipe is a warm one pot meal with bacon and smoked sausage. Throw in the veggies you have in your fridge (I used cabbage, carrots and potatoes). With a little seasoning and a few minutes of cooking time you’re ready to go!

This recipe is adapted from an oven recipe on Just a Pinch. The original author states, “This came about trying to make a potato casserole. Well, I had the potatoes, i had leftover cooked pork and an onion. Just got in from a bone-chill December drive home from work. Frazzled, not really wanting to cook at all, oh that cup of hot tea sounds so good. But hey family always comes first, so here we go.”

Ingredients/Substitution Ideas

  • Bacon grease–I save a container of bacon grease in my freezer. You can also fry up a couple strips of bacon and crumble (for later in the recipe) and then use the bacon grease.
  • Kielbasa–or smoked sausage, ham
  • Yellow onion
  • Chicken broth–or water and Better than Bouillon chicken base
  • Cabbage
  • Baby carrots–or peeled and cut carrots
  • Red potatoes–or peeled russet potatoes
  • Seasoned salt
  • Garlic powder
  • Bacon crumbles

Steps

Turn Instant Pot to saute setting. When display says HOT add in the bacon grease. Add in the kielbasa and brown for about 3 minutes on each side. Add in the onions and saute for 3 more minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the cabbage, carrots and potatoes (in that order). Sprinkle the potatoes with the seasoned salt and the garlic powder. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes for soft vegetables or 3 minutes for less soft vegetables. When time is up move valve to venting and remove the lid once steam has all released. 

Stir in the bacon crumbles. Serve and enjoy!

Notes/Tips

  • Serve with roasted broccoli, corn on the cob, a dinner roll or cornbread.
  • This recipe is dairy free and gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
