Autumn Casserole – 365 Days of Slow Cooking and Pressure Cooking

Autumn Casserole (Instant Pot Recipe)

Autumn Casserole

It has been super warm this fall up until today! Now it is rainy and cool and I broke out a sweatshirt and some apple cider. It feels like fall and that means I want to make fall foods like this dish today.

I picked up a container of pre-cut squash from Costco for convenience sake. But you can also peel and cube a whole squash if you’d prefer. I roasted the rest of the squash in a bit of olive oil and salt and pepper and it was tasty for a separate meal!

Ingredients/Substitution Ideas

  • Ground pork–or ground turkey, ground chicken or ground beef
  • Onion
  • Garlic powder
  • Kosher salt
  • Poultry seasoning
  • Black pepper
  • Chicken broth–or water and Better than Bouillon chicken base
  • Red potatoes–or peeled russet potatoes
  • Butternut squash–or sweet potatoes
  • Spinach–fresh or frozen
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the pork and break it up. Add in the onion. Brown for about 5 minutes. Stir in the garlic powder, salt, poultry seasoning and pepper. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes. Place a tall trivet* into the pot. Add the squash into a pan* that fits inside your Instant Pot. Place the pan on top of the trivet.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Remove the pan and trivet and dump the squash into the pot. Stir in the spinach and parmesan.

Serve and enjoy!

Notes/Tips

  • Serve with a side of cornbread or a dinner roll.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with butternut squash are Instant Pot Vegan Butternut Squash Soup and Slow Cooker Butternut Squash.
  • Try adding in some craisins for some bright color.
  • To cook the butternut squash separately I used a tall trivet* and one of these pans*. You can also just cook the squash directly in the pot with the potatoes. The problem with this is that the squash gets a little too soft.
  • Instead of spinach try adding in fresh or frozen green beans (add in after the potatoes).
