Ranger Frank Soup–a fast and easy Instant Pot (or slow cooker) chili soup with ground beef, ground pork, Rotel, kidney beans and fajita seasoning.

Ranger Frank Soup
This recipe is sort of a cross between soup and chili. It’s the perfect meal for this fall time of year! It really comes together quickly (there is no chopping!) and it has tons of flavor thanks to the fajita seasoning and Rotel tomatoes. With two types of meat you’ll be in the good graces of the carnivores in your family. We loved this soup topped with a dollop of sour cream, some cheddar cheese and Fritos. Enjoy!

Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7
- Ground pork
- Fajita seasoning–I just used Winco brand
- Beef broth–or water and Better than Bouillon beef base
- Black pepper
- Chili powder
- Garlic powder
- Rotel–I used mild
- Tomato sauce
- Kidney beans–or black, pinto
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and pork and break it up.
Add in the fajita seasoning. Brown for 5 minutes.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Dump in the pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans.
Cover Instant Pot and secure the lid. Set the SOUP button to 10 minutes or if you don’t have a soup button set the pressure cook/manual button to 10 minutes on low pressure. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Stir, serve and enjoy!
Notes/Tips
- Serve with a dollop of sour cream, a sprinkling of shredded cheddar and fritos or tortilla chips.
- This recipe can be gluten free if you use gluten free fajita seasoning. This recipe is dairy free.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and pork and break it up. Add in the fajita seasoning. Brown for 5 minutes. Transfer to the slow cooker.
- Stir in the broth, pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans.
- Cover and cook on low for 4 hours.
- Stir, serve and enjoy!
