Caramelized Honey Baked Brie with Warm Olives. Melty brie baked with garlic, rosemary, and honey. Top the melted, baked brie with warm, spicy olives made with butter, chilies, lemon, and thyme. The brie literally melts in your mouth. It’s a wonderful appetizer that’s perfect for holiday entertaining – festive, easy to prepare, and always a favorite.

The second I got home from Chicago, I dove into this recipe. I couldn’t let the holiday season go by without at least one new Brie dish to share with you all! Originally, I thought I’d make something else with my brie, but my sister-in-law mentioned doing a brie with olives, and I loved the idea.

I always forget about olives. I tend to gravitate towards fruits and brie paired together, but you can’t deny the deliciousness of warm, buttery olives with melty baked brie.

This baked cheese turned out SO DELICIOUS. It’s simple and easy to make yet incredibly YUMMY.

With Christmas just days away, the pressure is on to plan the perfect holiday. I always find two things to be helpful in the week leading up to the big holiday. Easy appetizers for house guests to snack on and dinners that feed everyone. We’ll do an appetizer today, then a dinner come later this week!

When thinking of holiday recipes, I can’t help but fall back on brie. My Nonnie always made a cranberry pecan baked Brie for Christmas (here is my variation). It’s one of those holiday memories/traditions I love to recreate!

Here are the details

ingredients

  • creamy Brie
  • fresh rosemary
  • garlic
  • honey
  • green olives
  • olive oil
  • Calabrian chili oil (or use crushed red pepper flakes)
  • lemon zest
  • thyme
  • black pepper

None! For this recipe, you’ll need two baking dishes. Nothing out of the ordinary!

Here are the steps

Step 1: cut the brie

Use a small pairing knife to cut the brie into a cross-hatch pattern. Just don’t cut the brie all the way through. If the brie came in a wooden round, place the brie back in the round and then onto a baking sheet.

I like baking the brie in the wood to contain the brie while it bakes. Using the round will ensure your brie comes out looking pretty every time!

Step 2: the garlic, rosemary, and honey

To the top of the Brie, add the garlic, rosemary, and honey, then bake.

As the brie bakes, the honey will seep into those slices and caramelize over the cheese and the garlic. It’s the most scrumptious!

Step 3: the olives

For the olives, I wanted them to have spice to balance out the sweet from the honey. I used Castelvetrano Olives, which are such a delicacy – salty, buttery, and meaty, the perfect Italian olive.

Bake the olives with olive oil, Calabrian chili oil for some spice (or just add crushed red pepper flakes), lemon, thyme, and black pepper. I like to bake the olives until the oil is sizzling. Warm olives are always best.

Step 4: serve

I love to serve the Brie while warm with the olives and oil overtop. Then add crackers and bread on the side for scooping and dipping!

SO DELICIOUS. This really is roll-your-eyes-back good. I promise this will be the favorite appetizer of the night!

  • 1. Preheat the oven to 375° F. 2. Place the brie in a baking dish. Cut the brie in a crosshatch pattern. Rub the rosemary and garlic over the brie. Drizzle with honey. Bake for 20 minutes, until the brie is melty. 3. In a separate baking dish, combine the olives, olive oil, Calabrian chili oil, lemon, thyme, and a big pinch of black pepper. Bake for 20-25 minutes, until the oil is sizzling.4. Serve the brie warm with the olives and oil over top. Add crackers/bread for scooping!
