Homework Casserole
This is the time of the semester when a certain kid I have has to, in his words, “make an academic comeback.” There has been lots of hammering out homework assignments and projects that have been neglected for weeks. I don’t love this style of doing school but sometimes I just have to shrug and move on and let him learn for himself that this might not be the best strategy. Anyhow, this was a dinner that he was happy to come and eat during a break from the school work. He loved how it was more rice with meat rather than meat with rice. Lots of yummy asian flavors and lots of protein. Enjoy this easy Instant Pot one pot meat!
Ingredients/Substitution Ideas
- Lean ground beef–I used 93/7
- Onion
- Kosher salt
- Black pepper
- Garlic powder
- Sesame oil
- Ground ginger
- Low sodium soy sauce
- Seasoned rice vinegar
- Beef broth–or water and Better than Bouillon beef base
- Converted rice–or jasmine, long grain white
- Carrots
- Cabbage
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease.
Stir in the salt, pepper, garlic powder, sesame oil, ginger, soy sauce, rice vinegar and beef broth. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the rice.
Dump in the carrots and cabbage.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Stir. Serve and enjoy.
