Quit Asking Casserole
Greg showed me a video of Nick Saban a few years back that he thinks is so funny…QUIT ASKING! When everyone is hovering around the kitchen and dinner is not quite done that’s my answer to everyone…”quit asking and why don’t you make yourself helpful and cut up some vegetables for me?” This dish won’t have everyone waiting for too long because it comes together quite quickly. There is a bit of chopping and slicing upfront but once everything is in the Instant Pot (or Crockpot) you’re done with all the work.
I’m a huge fan of all beans and rice dishes. They are so hearty and give you good amount of protein and fiber. This dish comes out almost creamy. I really loved my serving with a dollop of sour cream. The main thing you need to remember is to start soaking the beans the night before you want to make this dish. Set an alarm for yourself…it’s worth it.
Ingredients/Substitution Ideas
- Dried small red beans–make sure they are not old…if they are they will not get soft
- Salt–soaking the beans in a salty water is key to getting them the right texture
- Olive oil–or canola, vegetable
- Smoked beef sausage–or andouille sausage, conecuh smoked sausage
- Onion–yellow, white
- Celery
- Green bell pepper
- Garlic cloves
- Chicken broth–or water and Better than Bouillon chicken base
- Bay leaf
- Seasoned salt–or cajun seasoning
- Converted rice–or brown rice
Steps
The night before you want to make: add the beans to a large bowl and cover with plenty of water. Add in a couple teaspoons of salt. Let soak for 12-24 hours. Rinse and drain the beans when ready to use.
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the sausage and brown for a couple minutes on each side. Stir in the onion, celery and green bell pepper and saute for 3 minutes. Stir in the garlic for 30 seconds.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the bay leaf, seasoned salt, soaked beans and rice.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes (for white rice) or 22 minutes (for brown rice). When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
Discard the bay leaf. Stir well. Scoop onto plates and serve.

- Heat a pan over medium high heat. Add in the oil and swirl around. Add in the sausage and brown for a couple minutes on each side. Stir in the onion, celery and green bell pepper and saute for 3 minutes. Stir in the garlic for 30 seconds. Transfer to the slow cooker.
- Add in the broth, bay leaf, seasoned salt, soaked beans and rice.
- Cover and cook on high for 3-5 hours, or until beans are tender.
- Discard the bay leaf. Stir well. Scoop onto plates and serve.
