Tornado Casserole
This one pot meal is a winner! With lots of flavor and color it’s so satisfying. You’ll love the creamy sauce, the crumbled bacon, the bites of broccoli and chicken, and the slurp slurp noodles. Skyler and his friends took this one down in a few minutes. I served this all by itself but you could add a side of garlic bread or a green salad. Enjoy!
Recipe adapted from Just a Pinch’s alfredo tornado casserole.
Ingredients/Substitution Ideas
- Butter
- Onion
- Mushrooms
- Garlic powder
- Nutmeg
- Kosher salt
- Black pepper
- Red pepper flakes
- Chicken broth–or water and Better than Bouillon chicken base
- Old fashioned egg noodles–I used Mrs. Miller’s brand. They are in a stand up bag by the other pastas.
- Chicken tenderloins–I used frozen chicken tenders. You can also use chicken thighs or breasts cut into 1 inch pieces. Another option is to use rotisserie chicken.
- Cream cheese
- Frozen broccoli
- Sour cream
- Heavy cream–or half and half, evaporated milk
- Parmesan
- Tomatoes–I used grape tomatoes
- Bacon crumbles–or fried up bacon
Steps
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and mushrooms and saute for 4 minutes. Stir in the garlic powder, nutmeg, a pinch of salt, pepper and red pepper.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the noodles. Place chicken on top of noodles evenly. Sprinkle the chicken with a pinch of salt. Place cream cheese on top.
Place a tall trivet* into the pot. Add the broccoli into an oven safe pan* that fits into your Instant Pot. Place the pan on top of the trivet. (I do this so the broccoli doesn’t get overcooked)
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting and remove the lid.
Remove the pan and trivet. Stir in the broccoli, cream, sour cream.
Sprinkle the parmesan cheese, bacon and tomatoes on top. (I used my air fryer lid to melt the cheese).
Serve and enjoy!
Notes/Tips
- Serve with garlic bread and green salad.
- You can leave out the chicken if you prefer. Keep the same cooking time.
- I found the special homemade egg noodles next to the regular pastas. They look more homemade and they taste really great in this recipe!
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with bacon crumbles are Pittsburgh Casserole and Soccer Mom Soup.
