Winter Casserole–a savory pork stew served over rice made fast in the Instant Pot or low and slow in the Crockpot.
Winter Casserole
This is a warm recipe for those cold winter days. It’s been chilly here and this winter pork stew was the perfect dinner to warm me right up! I was blown away by the amazing flavor of this dish! I loved the savory, salty sauce that soaks into the rice. The pork was very tender. This is a perfect winter meal with bright flavors and colors (thanks to the turmeric).
Ingredients/Substitution Ideas
- Bacon fat–I save leftover bacon grease in my freezer for occasions such as this
- Onion–yellow or white
- Celery
- Oregano
- Dried thyme
- Dried basil
- Dried rosemary leaves
- Chicken broth–or water and Better than Bouillon chicken base
- Pork shoulder/blade–I bought a package of cut up cubes of pork at Winco that was labeled pork chili verde meat. You can also make this with beef stew meat. You will need to increase cooking time to 20 minutes.
- Turmeric–or curry powder
- Kosher salt
- Pepper
- Tomato sauce
- Sugar
- Carrots–or baby carrots
Steps
Turn Instant Pot to saute setting. When display says HOT add in the bacon fat, diced onion and celery. Saute for 3 minutes. Stir in the oregano, thyme, basil and rosemary.
Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the pork. Sprinkle it with the turmeric, salt and pepper. Dump in the tomato sauce, sugar and carrots.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up let pressure release naturally for 10 minutes and then move valve to venting. Remove the lid.
Stir.
Serve over rice.
Notes/Tips
- Serve with a green salad, roasted vegetables, crusty bread or sauteed spinach.
- Try adding in a can of white beans (rinsed and drained) when you add in the tomato sauce.
- I used a separate Instant Pot to cook my rice but you can cook it in the same pot too. To make pot-in-pot rice: If you want to cook rice at the same time then fill a pan* that fits inside your Instant Pot with 1.5 cups of water and 1 cup of uncooked jasmine rice. Place a tall trivet* in the pot after step 3. Then Place the rice pan on top of the trivet. The rice will cook perfect at the same time as the pork.
- If you’re trying to cut down on carbs you can also serve this over spaghetti squash or cauliflower rice.
- This recipe is gluten free and dairy free.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 3-4 days or in the freezer for up to 3 months.

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the bacon fat, diced onion and celery. Saute for 3 minutes. Stir in the oregano, thyme, basil and rosemary. Transfer to the slow cooker.
- Add in the pork, broth, turmeric, salt, pepper, tomato sauce, sugar and carrots. Stir.
- Cover and cook on low for 4 hours, or until pork is tender.
- Stir. Serve over rice.
Notes
