Yo Ho Casserole

Yo Ho Casserole (a spinoff of shipwreck casserole) is a hearty, budget-friendly, and comforting one-pot meal that’s perfect for busy weeknights. My Instant Pot version cuts down on cooking time while still delivering layers of flavor and a satisfying combination of protein (ground beef), vegetables (tomatoes and cabbage), and starch (potatoes). Kids and adults alike will enjoy this dish with its melty cheese on top. This Instant Pot casserole only requires a 2 minute pressure cooking time so you can be spending less time in the kitchen and more time cozying up with a blanket and good book or show. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or lean ground turkey
  • Yellow onion–or white onion
  • Garlic powder
  • Kosher salt
  • Cumin
  • Paprika
  • Black pepper
  • Chicken broth–or beef broth
  • Cabbage
  • Petite diced tomatoes–or crushed tomatoes
  • Russet potatoes–or red, yukon gold
  • Cheddar cheese–or colby jack, monterey jack

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease.

Stir in the garlic powder, 1 tsp kosher salt, cumin, paprika and pepper.

Pour in the broth and scrape bottom of pot so that nothing is sticking. 

Layer the cabbage on top, then tomatoes and finally the potatoes evenly on top. Don’t stir. Sprinkle a pinch of salt over the potatoes.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir. Sprinkle cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with corn on the cob, fresh fruit or a dinner roll with butter.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • This recipe is gluten free.
  • To make this dairy free don’t add in the cheese at the end.
  • Want to spice it up? Add in some chopped tame pickled jalapenos.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
